海藻糖(Trehalose)為一種非還原性的雙糖，主要由2個葡萄糖分子以α,α(1,1)醣苷鍵鍵結而成，且海藻糖廣泛存在於各種生物體當中(例如:細菌、真菌...等)，其主要功能在於幫助生物體對抗各種極端環境(例如:寒冷、乾燥、炎熱...等環境)。
海藻糖於食品工業上的應用
➡️美國食品和藥物管理局(FDA)已將海藻糖判定為一般認定安全性(Generally Recognize as Safe，簡稱GRAS)1之物質
➡️海藻糖甜度約為蔗糖的45%，且每公克產生的熱量為4大卡。
➡️海藻糖具有安定性、耐酸性以及較佳的吸濕性，在烘培產品上，可保持產品之濕潤感。

- SAMPLE PREPARATION:
Sample dilution.
The amount of trehalose present in the cuvette (i.e. in the 0.2 mL of sample being analysed) should range between 4 and 80 μg. Thus, the sample solution before the borohydride reduction step must be diluted sufficiently to yield a trehalose concentration between 0.12 and 2.4 g/L.
